AN AMERICAN-themed franchise restaurant specialising in burgers, pizzas and cocktails is set to launch in Lerwick.

It is hoped that Monterey Jack’s will open in the current Paparazzi premises on the town’s Commercial Street next week.

Contractors arrived in Lerwick on Monday morning to overhaul the building’s decor in a Wild West style.

Monterey Jack’s Lerwick director Richard Fergie confirmed all of the existing Paparazzi staff will transfer to the new business, while an extra ten employees will be recruited.

The franchise has restaurants in Stirling, Perth and Dunblane while a new outlet in Glasgow’s west end is set to open.

Fergie said: “We are so pleased to be expanding the Monterey Jack’s family to include our latest franchise in Lerwick offering the local community the opportunity to experience what Scotland’s fastest growing bar and restaurant brand has to offer.

“If you haven’t stepped inside a Monterey Jack’s before, you are in for a Wild West treat – yeehaa!”

Its menu features a range of options, from enchiladas and nachos to desserts and £4 cocktails.

The franchise is also keen to hear from Shetland musicians and bands who would be interested in performing live at the weekends in the upstairs area.

Monterey Jack’s will also offer a takeaway service in Lerwick, while the menu is expected to feature an extra ‘local’ section to continue some of the options which proved popular at Paparazzi.

They will have a separate gluten free menu and staff will have allergy data sheets to easily identify what dishes are suitable for vegetarians and vegans.

Fergie said the franchise will also look to work with local suppliers to source many of its ingredients.

“Like all other Monterey Jack’s restaurants, Lerwick will offer freshly made and cooked to order food and drinks created using only the best ingredients from our respected suppliers, both local and national,” he said.

“I am also speaking with local suppliers here on Shetland to ensure our fresh ingredients do not have far to travel to reach the plates of our customers.

“In the under-utilised upper floor of the Commercial Street location, we are also creating a casual bar and saloon which will play host to our live music performances which are a core part of the Monterey Jack’s brand.

“To that end, my team and I are looking for talented musicians from across the islands who think they have what it takes to play at our new Lerwick bar and restaurant to get in touch.”
